Happy Easter! ¦ Mini Egg Chocolate Tiffin Recipe

Happy Easter!

Without further ado, I present to you one of my favourite recipes - with a twist! I absolutely love making chocolate tiffin (malteser being my absolute fave) so since it is Easter Sunday, I thought I would bring you a delicious, easy-to-make dessert, mini egg style.

I hope you like the recipe and don't forget to send me photos on Instagram/Twitter if you try it out!

Ingredients

225g Digestive biscuits, crushed
2 tbsp Caster Sugar
2 tbsp Golden Syrup
110g Margarine
4 tsp Cocoa Powder
225g Milk Chocolate
150g Mini Eggs

Method

1. Crush all the digestive biscuits up and place in a mixing bowl. I recommend crushing them in a bag and using a rolling pin.

2. Melt the margarine, syrup, sugar and cocoa powder over a saucepan. Once melted, add 3/4 of the mini eggs to the mixture.

3. Pour the melted mixture into the bowl holding the crushed biscuits. Mix thoroughly and pour into a baking tin.

4. Melt the milk chocolate in a separate saucepan and pour over the mixture in the baking tin.

5. Decorate the top with the remaining mini eggs (or any other easter treats) and leave in the fridge for 15+ minutes.

This Easter, I kindly asked my family NOT to buy me any Easter eggs - I am reaaaaally trying to eat better and hundreds of choccie calories were not going to do my belly any favours! Instead, I was fortunate enough to receive some vouchers, cuddly toys and money (with a couple of chocolate presents here and there).

I hope you are all having a wonderful Easter, whether you are spending it with friends, family or for some, working. Have a fabulous day! Now...off to my Nan's for a lovely family dinner.

Oreo-Filled Cookie Recipe

After seeing endless videos/pictures on social media of everyone's favourite treats encased in cookie dough, I knew I had to get baking! My boyfriend and I fell in love with the oreo-filled choc chip cookies and began to prepare a recipe...

Gather the ingredients below and follow our method to bake some of the best cookies you've ever tasted. If you do end up making some/a variation of these cookies, don't forget to send us a picture of them via my Twitter/Instagram Direct Messaging.

Ingredients (serves 10) :

200g Margarine
200g Caster Sugar
2 Eggs
400g Plain Flour
2 tsp Vanilla Essence
200g Chocolate Chips (100g White Choc & 100g Milk Choc)

Method :

1. Grease your baking tray and preheat the oven to 180ºC/350ºF/Gas Mark 4.

2. Cut the margarine into small cubes, place in a bowl and mix the sugar until a fluffy mixture is formed.

3. Add both eggs to the mixture and stir.

4. Sieve the flour into the mixing bowl - if your mixture looks like the desired dough, begin to knead.

5. After kneading the dough, incorporate your choice of decoration/added extras (ours were white and milk choc chips!!!)

6. On a clean surface, break a small section of the dough mixture and press until a flattened, circular shape is achieved. Place an oreo, or your specified treat, onto the dough and fold the outer layer so the oreo is completely covered.

7. Repeat step six for the rest of the mixture. Place on the baking tray and bake in the oven for 10-15 minutes. Remember to leave them to cool on a rack for a further 10 minutes after being in the oven.

8. ENJOY! Eat them alone or acquire some mint chocolate ice cream as an added touch - it tastes amazing!

I hope you all enjoyed this slightly different post - comment below if you would like to see more recipes on my blog in the future. :-)

Making A Gingerbread House

Today I've got of a bit of a belated Christmas post, although it is still the festive season. On Christmas Eve, my boyfriend and I decided to make a gingerbread house and decorate it. Luckily, IKEA sold pre-made gingerbread pieces that we Aidan structured into a sturdy ginger home followed by myself making the roof and building pretty, decorating everything with icing sugar, coloured designer icings and lots of sweets.

Here's the creating process through photos...

It was really fun making a Christmas/Seasonal Themed food post. I'm hoping to make this an annual thing; also, I may begin to upload baking posts in the coming year. If you like these styled posts, let me know.

Most importantly, this post was a #holidaycollab with some of my lovely girl blogger friends I collaborated with earlier on in the year. If you want to take a look at their festive posts (fashion, food etc) then click on their links below :

Hope you all had a wonderful Christmas - leave me a comment letting me know what you got!
